Cognac comes from a clearly defined region of France, around the town of Cognac. Its outstanding environment is unique in the world. Four centuries of cultivation in the chalky sub-soils of the Charente region of France whose unique climate is moderated by the influence of the Bay of Biscay, and a family history dating back to 1765, has made Hennessy Cognac what it is today. Crafted exclusively from grapes, distillers in the Cognac region have been using the double distillation method since the sixteenth century. Throughout the winter, until the end of March, the copper alambics (pot-stills) work continuously to turn the wine into eau-de-vie. The slow and natural ageing in oak casks develops the aromas, flavors and colors of Hennessy cognacs.
